Here are some food safety tips in preparing cold combination dishes:
-Cold combination dishes are dishes made of the same food items as hot combination dishes but are prepared with cold ingredients, kept cold and are mixed with an acidified dressing (pH less than 4.1), e.g tuna salad, egg salad, macaroni and ham salad, cold meat, and cheese sandwiches
-Uncooked items such as fruits should be washed and kept at 4.44°C prior to mixing.
-Prepare salads with ingredients that have been pre-cooled to 4.44°C.
-Many ingredients, such as pasta and potatoes, can be cooled in ice water.
