• Avoid cross-contamination. Do not place raw meat near the cooked ones on the barbecue grill and do not put cooked meat back on the same plate that contains raw meat juces, make sure you have plenty of clean utensils and platters.
• Meat should be cooked thoroughly until no pink part is visible and is piping hot in the center. Raw or undercooked meat may contain pathogens that can cause food poisoning, such as Salmonella, E. coli 0157:H7, Listeria, among others.
• Do not pour marinated raw meat juices on to cooked meat.
• Use separate utensils (plates, tongs, chopsticks, and containers) for cooked and raw meat.
