Food allergy occurs when the body’s immune system reacts to certain proteins in food. Allergic reaction may vary depending on the amount of food taken in or the threshold of the person to a certain allergen. Reactions can be as simple as itchy skin or can be as worse as anaphylaxis. While any food can cause an adverse reaction, eight types of food, also known as the big eight, account for about 90 percent of all reactions: eggs, milk, peanuts, tree nuts, fish, shellfish, wheat, and soy. 

Consumers must be cautious of the food that they take. However, the responsibility is also shared by the food manufacturers as it is their duty to ensure that their products are properly labelled. Proper testing and labeling for food allergens presence must be exercised.
