Food fraud is any intentional action by individuals or businesses to deceive and take advantage of consumers for financial gain; this may be through (1) diluting or substituting ingredients with cheaper alternatives, (2) using fake products, (3) using artificial enhancements, or using (4) undeclared or unapproved biocides in food products.
Food defense is the effort to protect food from acts of intentional adulteration or tampering with the intention to cause harm.
