Aflatoxin is one of the most potent natural carcinogens known to man and has been linked to a wide variety of human and animal health problems. In 2004, in Kenya, 125 people died and nearly 200 others were hospitalized after eating aflatoxin-contaminated corn.
Aflatoxin may be present in a wide range of commodities, particularly in corn, wheat, rice, soy, raw peanuts, and peanut butter, among others. Milk, cheese, and other dairy products may be contaminated by Aflatoxin M1 while several food and feed products have been recalled due to aflatoxin contamination.
